Hibiscus sabdariffa L. is grown in Chad under favourable climatic conditions. It is the calyces — the fleshy epicalyces surrounding the flower — that are harvested at maturity and processed into different forms depending on the target industrial application.
Their composition is well documented: rich in anthocyanins (delphinidin-3-glucoside, cyanidin-3-glucoside) responsible for their intense burgundy-red colour, as well as hibiscic acid, citric acid, vitamin C and antioxidant polyphenols. Moisture kept at ≤ 12% to ensure optimal preservation.
