Dehydrated ripe papaya from Chad

Ripe papaya (Carica papaya L.) is a climacteric fruit with orange flesh, rich in carotenoids. There are two main types — red-fleshed (lycopene-dominant) and yellow-orange-fleshed (β-carotene- and β-cryptoxanthin-dominant). The dehydration process removes the water from the fruit (natural moisture ~87%) and concentrates the nutrients — natural sugars, β-carotene, vitamin C, polyphenols and carotenoids — in the resulting dry matter.

Dehydrated papaya is particularly rich in β-carotene (a vitamin A precursor), antioxidant vitamin C and polyphenols — notably scientifically documented catechins and flavonoids. The intense natural orange colour is due to carotenoids, including β-carotene and β-cryptoxanthin. These natural pigments can also be used as natural food colourants in certain applications.
