Hibiscus flowers from Chad — Bissap, Karkadé
Hibiscus sabdariffa L., commonly called Bissap in West Africa or Karkadé in North Africa and the Middle East, is a plant grown in tropical and subtropical zones. It is the fleshy calyces — the epicalyces surrounding the flower — that are harvested at maturity and then dried for industrial use.
Their chemical composition is well documented scientifically: rich in anthocyanins (mainly delphinidin-3-glucoside and cyanidin-3-glucoside) responsible for their intense burgundy-red colour, as well as hibiscic acid, citric acid, vitamin C and antioxidant polyphenols. Crude protein content is around 0.18–0.31% and fibre content 1.17%. Export moisture is kept at ≤ 12% (controlled solar drying).
