Black sesame from Chad — differences from white
Black sesame seeds are unhulled seeds from specific Sesamum indicum cultivars whose seed coat (outer husk) is naturally black. This coat concentrates anthocyanin pigments and additional phenolic compounds, giving black sesame a higher antioxidant profile than white and a more intense, slightly bitter, earthy flavour.
Nutritionally, black sesame keeps its seed coat — giving it an exceptional calcium content of 975 mg/100g and 11.2% dietary fibre, higher than hulled seeds. Oil content (50–55%) and protein (20–25%) are identical to white. The natural antioxidants sesamin, sesamolin and sesamol ensure excellent oxidative stability with a 12-to-18-month shelf life at moisture ≤ 6%.
